Recipe: Banana Nut Muffins

We recently introduced breakfast at our Kailua-Kona location and have had great feedback from our customers! We wanted to share a recipe for one of the fan-favorites – the Banana Nut Muffins!

Banana Nut Muffin Recipe:

  • 4 cups roasted fresh bananas
  • 1 lb browned unsalted butter
  • 2 1/4 cups sugar
  • 4 1/2 cups All Purpose Flour
  • 1/2 tsp Kosher salt
  • 3 large eggs
  • 1 tbl baking powder
  • 1 tbl baking soda
  • 12 oz chopped mac nuts
  • 1 oz cinnamon

 

Mix all dry ingredients together. Add the wet ingredients and bake at 325 for about 20 minutes. Since some ovens act differently, cooking time may vary! To see if they are done, check with a toothpick – if there is no batter on the toothpick, theyʻre done!
