Huggo’s Whole Kampachi Asian-Style

Chef Ken serves up Kampachi for two as a Huggo's special!

After previewing — and tasting —  the freshest, local seasonal ingredients available, Huggo’s Executive Chef Ken Schloss puts together his nightly specials each week. A week ago, diners feasted on his Whole Roasted Kampachi, Asian-style. “Of course, fresh daily seafood dishes are always given top billing. Huggo’s has developed incredible relationships with Big Island fisherman over the past 40 years; I can’t believe the quality and diversity of fish we see coming through our doors on a daily business — it’s every chef’s dream,” Schloss said.

Huggo’s own general manager, Greg,  is known to land a few big ones on his deep sea ocean adventures off the Big Island of Hawaii as is soon to be seen in Farish Media’s (Regina and Mason Farish) “Salty Dog” sportfishing TV program on Versus. Here he is, pictured below, during season two filming!
